Carrot and Zucchini Fritters

Vegetables are a great way to provide the necessary vitamins and minerals to your family. However, how many times have you told your children to eat their vegetables? Probably a lot.

For some reason, children have an aversion to vegetables. They will cry and sit for hours before you finally give in and send them from the table.

Vegetables do not always have to be the enemy. The key is to find a creative way to prepare them and your family will become vegetable lovers rather than vegetable haters!

Do you remember when you were a child and your mother dropped a soggy green lump of cabbage on your plate. Did you want to eat it? Almost certainly not.

There are various ways to encourage your children to eat their vegetables.

You might even need to trick them!

These fritters are a great way to get your toddlers to eat their veggies!


Ingredients:
1 medium carrot
1 medium zucchini
4 spring onions
1/3 cup reduced fat ricotta cheese
1 egg
1/2 cup wholemeal flour
1/4 teaspoon cayenne pepper
olive or canola oil spray
salt reduced barbecue sauce or tzatziki


Method:
  1. Wash vegetables.
  2. Grate carrot and zucchini and chop spring onions.
  3. Mix vegetables, ricotta cheese, egg, flour and pepper.
  4. Lightly spray non-stick frying pan with oil spray. Heat to 150°C (low to moderate heat).
  5. Place large spoonfuls in frying pan, flatten and cook for 7 minutes or until golden.
